Fat for lunch?

Hey everyone! Thanks for your support it's been amazing! Wanted to ask for opinions on the following..

 

It's been a week since the start of my transition to a high-fruit vegan diet, and I have to say it's been great! If I get hungry, I eat a(nother) banana, or some dates, and for the first time I am not "looking for something else even though I'm not hungry".. who else shares this exciting occurrence? It's AWESOME! AND as a side effect, I've lost a kilo. YAY! (Is anyone getting tired of bananas though? It's a bit of a concern.. just wondering if I will be able to keep it up!)

I haven't yet been able to get enough water in though! It bugs me.. any suggestions? 

 

So.. In my partner's family everyone is big on Lunchtime. For them, it's the biggest meal of the day..

At 1:00pm on most weekdays, we sit down at the table and there is all manner of salads, and vegetarian dishes (cooked or raw).

 

Most of these dishes have olive oil and salt in them, and the salads have these plus vinegar.

I know we should not eat fruit on top of (after) fat.. but how long does this rule apply? a couple of hours? or more? Can I do this and still have a date pudding or banana smoothie for dinner, or is it absolutely essential that I swap this meal for fruit and have the salad at the end of the day instead? This would be hard considering the family already thinks we are nuts!! It took a long time for them to accept our vegetarianism, now vegan?? And so much fruit?!! :)

 

By the way, I have started reading 80-10-10 and it's really making heaps of sense.. so if the info is in the book, then I haven't got up to that part yet!

 

Oh another quick question.. What's your take on yummy fresh coconut water? Just looked it up.. no fat, some simple sugar, potassium, magnesium and calories.. How much do/can you drink?
