HCLF Vegan Pasta Sauce?

Hi

I'm wondering if anyone has a good recipe for pasta sauce WITHOUT tomatoes? Before HCLF I would do garlic, olive oil, and white wine but obviously that won't work. I have started getting extreme pain and bumps in the back of my throat when I eat nightshades (so potatoes and tomatoes are out for me). I really want pasta but not without sauce!

Also does anyone have an idea what could be substituted for raw noodles? I know the standard is zucchini, squash, or cucumber but I dislike all of those. I've been racking my brain and can't come up with anything else that would work/taste good.

  • Hi Angie,

    Instead of using tomatoes as a base for a pasta sauce you can use blended roasted peppers/capsicum.  So you would roast the peppers, peel the skin off them (i prefer doing this as the skin can be a little tough similar to the tomato skin) and then blend them up with whatever other spices or flavourings you like.  it doesn't come out super thick like a tomato sauce would but it is still super yummy :)

  • I really like fullyrawkristina's noodle recipes, like the zoodles with avocado basil pesto, curry and mango avocado sauce, or raw pad thai. when I want cooked spaghetti, my favorite topping is broccoli and/or mushrooms roasted with garlic and lime. Another idea is cauliflower or cashew "alfredo." Cashews are so tasty, and although they are high in fat, just a little bit of sauce packs a punch.
