Low fat high carb vegan lasagna!

Yum!!! Made this last night and was SO EASY. YUM. 

I didn't do this bit because my pan wasnt deep enough for heaps of layers butttt the layers are:

Layer of gluten free lasagna pasta noodles 

Layer of tomato sauce 

Layer of lentils/beans/mushrooms/anything you want 

Layer of mashed potato 

So you'll need a can of crushed tomatoes with a bit of basil or some herbs already in there, a can of lentils or chickpeas, 1/2 an onion, mushrooms and mashed, steamed potatoes. 

I blended my can of tomatoes up to smooth it out a bit then I put a layer of pasta down, then a layer of the tomato sauce. I heated up the lentils with the mushroom and onion and added a bunch of herbs for some yummy flavour, then put a layer of that. Another layer of pasta, sauce, then lentils, and topped it off with mashed potato, then bake covered with foil for 35 minutes at 180 Celsius, then remove the foil and bake for 10 minutes. You can scatter some herbs over the potato for some delicious flavour as well, I like rosemary and sage.

  • How big of a can of crushed tomatoes? How big of a can of lentils or chickpeas. How many mushrooms? How much steamed mashed potatoes?
  • Sounds delicious!  Try to put up a photo of it when you get the chance.
