  • Yesterday evening I had for dinner a salad made of: 3 small heads of butter lettuce, 15 small garden cucumbers (sliced) and a simple dressing made of the juice of half a lemon and a little water. It was so good and filling, simple and savoury. And nightshade-free.

  • Zucchini Pasta:

    -spiralize zucchini (4-5 zucs)

    -spiralize beets (1-2 beets)

    and add orange juice!! enjoy :) Voila!

  • Salad dressing: nectarine (or peach), cucumber and lemon, blended smooth.

  • Ok, so I have to admit I haven't actually tried this yet as I'm only just realising how exhausted nightshades made me feel, but i have in mind a dressing of cucumber, lime and cilantro. I guess you could sub herbs, maybe mint, dill, basil etc and also add mango if you prefer a sweeter dressing. I'll let you know when I try it, or if anyone else tries first, please let me know!

    Blending green grapes with celery makes a delicious dressing, for salad or noodles.  I use 2 cups of grapes, with 2 celery stalks.  Yum!

  • I'll start it off:

    Pretty Garden Pea Salad
    -Fresh peas
    -Cucumber
    -Celery
    Blend above ingredients in proportions to suit your personal liking, and pour onto a bed of:
    -Pea shoots
    -Whole peas
    -Iceberg or bok choy
    You could also add some finely diced lemon pieces on top, if not grated carrot also makes a nice garnish.
