I'd end up with a jar of peanut butter, a small packet of fruit (too much sugar was a definite no for me back then,) some crackers, maybe some microwave rice (I'd only eat half the packet mind) or some salty tomato soup. I'd always take a few scoops of my pea protein shake too.

Now that fruit is my dietary staple though, it's easy to eat anywhere! I don't have any concerns about going abroad or anything as I'm always going to be able to get a hold of fruit, rice and potatoes; even in a lot of restaurants.

So yeah, I'd probably conclude that if you're going to go vegan, then restricting calories/ carbs and worrying too much about protein is what makes it awkward. Eat like an actual herbivore and you're good to go! Relying on tofu/ other soy based meat substitutes, is going to cast you out.

I've eaten rice all my life, and after transitioning to this lifestyle I cut it out, along with other cooked foods, for the first month entirely. Did awesome. Now 2 weeks ago I ate a bowl of rice for the first time in a while, and the morning after I woke up feeling down, and even angsty about pure nonsense, my thoughts were racing like crazy. I thought then if maybe the rice caused this? but I stopped thinking about it until yesterday when I had an urge to have rice so I did, and bam, the today I felt the same way I did 2 weeks ago. What. The. Fruit.

I don't ever feel like that since doing 811 so I'm very surprised rice makes me feel that way!

I've had problems with depression and anxiety in the past and I would've never thought one of the culprits could be the rice. Maybe there are other causes I'm not aware of, but these symptoms are DEF noticeable after I eat rice.

It made me wonder... does anyone feel similarly? Or has anyone got any cooked food in particular that gives you anxiety or depression symptoms?

Hello, friends. So, because I am a college student, I cannot afford to eat fruit all of the time (several thousand dollars in the minus, lol). My staples do include bananas, rice, corn noodles, rice noodles, A LOT OF RICE, more rice, rice, rice, and rice. Now, my usual meals of the day look like this:

breakfast: smoothie with 7 bananas and 7 dates

Now, for lunch, it really alternates based on my money. I either eat half a rice cooker amount of rice with veggies (which may or may not include half an avocado), the same thing I ate for breakfast, or some combination of 4 apples and 5 bananas blended up with 3 dates.

Dinner: half a rice cooker amount of pasta (usually corn), 6 large red potatoes, or half a rice cooker amount of rice with vegetables.

Snacks: I usually guiltily eat at 7 again because my dinner is usually at 5. Probs 2 or 3 bananas or a cup of rice.

*for rice cooker, think of the medium standard Zojirushi rice cooker

Is this too much? I am 19 years old, 64 inches, and I usually do about 30 minutes of body-weight exercises a day, followed with about 10 minutes of stretching (because I fall asleep much better if I do). Some fellow high carb vegans told me that I am doing the most, and that I am defeating the purpose of this lifestyle. :( They said high carb cooked and raw at times don't mix. I definitely don't mix bananas and rice in one meal, but I do eat them as separate meals.

Chrono said I eat about 3100 calories a day. >.< GEEEZ.

Cooked food has always been a negative thing for me, but that never stops me from eating it when I'm not full. Over the years I have realized it's not emotional, it's not nutrient deficiency, it's not lack of willpower; it's just starvation. But I still always wanted to be 100% raw because I know that's best for my skin and body odor. So it feels bad when I eat cooked, because I know I'm not being optimal.

But I want to change that and I've recently met a couple high-carb vegans who eat lots of fruit, yes, but they also eat cooked and are totally comfortable with it. I haven't met lots of fruit people in my life, maybe 10 max before coming to Berkeley, and they were all pretending to be 100% raw but were definitely not, and/or would eventually change diets. I got a new perspective from some of my new high-carb friends.

They eat cooked food for health, because they need to, because it's healthy to get carbs in when you need them. So please help point me in the right direction so I can just get a better relationship with cooked food, instead of always worrying that I'm falling off the wagon.

This is what I'm thinking: instead of doing my raw thing for weeks at a time expecting that I'll do it forever, then all the sudden going off the deep end and eating oily bread and vegetable sort of foods or low-quality high-oil high-salt spaghetti sauce over low-quality pasta or really fatty vegan sandwiches on wheat bread, I want to actually intend to have a healthy cooked meal sometime. I want to have a massive bowl of rice tossed with fresh vegetables. This will probably actually help me be even more raw then I was before because I won't have to go through so much emotional trauma over eating it and stay locked in food negativity mood for days at a time. I want to actually plan to eat cooked food before I even have cravings.

Thoughts? Comments? Criticisms? Suggestions? Experiences? Questions?

I also didn't have applesauce, but had apples --so, I peeled the apples and diced big chunks to boil in some water, for 20 minutes. After the apples cooked and cooled, I added them to the mixture along with the thawed bananas.

Preheat oven to 350 degrees F; and mash the bananas in a large bowl. Stir in oats, dates, applesauce and vanilla. Mix well and let set for 15 minutes. Drop a tablespoonful onto a cookie sheet; and bake for 20 minutes or until brown.

These cookies are so delicious and healthy, and they're a great snack for kids!

For more recipes, or information about veganism, check out my blog @ http://veganslivingofftheland.blogspot.com/

My goals are:

Sleep 8+ hours a night

Drinks lots of water!

Eat at least 570 carbs a day (this is based on my body weight)

Exercise multiple days a week

Get some sun when possible (it's starting to get cold up here in norther Minnesota already!)

Relax more often (I'm a busy bee)

If you'd like to join me for a month of focusing on healthy habits and high-carb foods, please do! My staples for the month are going to be bananas, dates, celery, potatoes, and rice. Post other ideas for good staples as we prepare!

I'd like those of us who decide to do this to post EVERY DAY. Even if we mess up - it's okay! For my own life I see eating this way MOST OF THE TIME as optimal - I can make exceptions in special cases (but always keeping it vegan!)

Post below if you will be joining me for a October HCCV Challenge!

Kayla Marie

No oils, no condiments or salt.
