  • If you are looking for a higher nutrient content, choose foods with color. If that is the case, purple potatoes, yams, pumpkin, and other colorful root veggies are the way to go. If you are just going for the carbs, then any white potato will do. (Yes, I know pumpkin and other squash are not root veggies but they are a good option.) Hope that helps. :-)
  • Any potato will do :) as long as you don't cook it with oil and a ton of salt.
