Tomato soup with rice

A very simple but tasty addition to my evening meals, tomato soup with rice. Of course no rice is being used, I'm just referring to the childhood recipe.

Blend together:

6 large strawberries

1 large heirloom tomato

3 medjool dates

................................

In a soup bowl grate on the medium sized holes 3 stalks of celery (the rice)

Pour over this rice the above soup. Very yummy. Enjoy.

  • I think I might try this but instead of rice I'm going to try and grate a zuccini to give it that texture

    • Observe that you can easily digest the zucchini skin. I get gas from it. So when I grate zucchini, I peel it first.

  • Indeed it is. The tartness of the tomato and strawberries plays so well with the dates, and the saltiness of the 'rice' is the perfect balance of tastes. Nowadays I have been experimenting with grating radishes instead of celery, and they too taste lovely, piquant un tous de petit peu!
