You freeze ripe bananas :) If they are frozen while they are still unripe, there is no way that they will ever ripen and then you wouldn't want to eat them, whether they are blended into banana ice cream or not ;) In fact, I'd let them get as ripe as possible, it makes the banana ice cream even sweeter.
