mashed bananas freezer brown top

I don't have anything anymore to decently mash my frozen bananas, so i thought let's just mash them with a fork and put it in the freezer.

I now a few hours later checked on it and saw that it was still not completely frozen and the top layer turned brown (which i was afraid of). perhaps next time i should keep the lit off at first so it can freeze better all around without the warm air locked into the container keeping things warm for the top layer.

What is the brown stuff? is it any bad or should i just eat it?

  • Also you can chill your bananas before you mash them, so they freeze quicker :)

  • it's just oxidized.  Might taste a bit freezerish, but hasn't gone bad, certainly not in such a short time and in the deep chill.
