What to do with a Plantain?

Hi guys,

I've bought a plantain to try at is I always get the same bananas all the time (but plantains are more expensive).

Then It sort of dawned on me that you don't necessarily use plantains like mainstream bananas and most people use plantains in savoury recipe.

So I was thinking of maybe doing a curry sauce or something, but I wouldn't know what would work… So do you guys have any nice and simply savoury plantain recipes ? Or do you just eat them raw like any other banana?

PS: it's very ripe, yellow and "spotted", not green :)

  • I like to boil ripe plantains (must have lots of black splotches), i usually eat them with rice or beans

  • I love plantains. Specially in winter. I buy 6/8 of them and wait for 11/14 days until they re ripe. They are ripe when they are almost completely black. When they get some mold on the outside I wash them and put them in the fridge. 

    I usually have one or two if I am too hungry until i get my dinner ready.

  • I eat raw plantains all the time. Yellow. I'm too impatient to wait for them to turn black but they are much sweeter and softer when black. They are starchier when yellow which I prefer.

  • i can remember that someone here said that if you want to eat it raw it needs to be basically completely black.. but i myself don't know the first thing about plantains.

    • Indeed you are correct.

      I wait until the skin goes almost totally black even to the point that the flesh becomes a little soft and gooey - delicious.

      The plantains below are very ripe and gooey. You don't need to let them ripen as much as these.
