How do you know if you've eaten enough?

I've been eating roughly 1000-1400 calories a day. I eat until I'm not hungry or until I'm full, I've been drinking 4-6 liters of water a day... and I've been exercising for 30-60 minutes a day. 
I haven't tried eating 2,000 calories a day, but I have no idea how I would even be able to eat that much. 

My goal is to lose thirty pounds.
I've read where people who don't eat enough fruit don't lose weight and the minute they start eating their recommended calorie intake or whatever they begin losing weight, but that's just so unreal to me. 
I know that weight loss isn't the only thing I should focus on, but it's a key factor in my body regaining health.

Any advice, references, comments would be appreciated :) 

Also, how much weight have you lost? What did you eat, how much did you exercise, etc. etc. etc.
