Fried Green Tomatoes?

My 90 year old mother is attempting to reverse arterial disease without surgery, and is making a transition from vegetarian to vegan....She LOVES traditional fried green tomatoes....recipe using eggs (for glue I guess), and cornmeal....

After a significant google search I became frustrated. Nearly all used oil and egg whites.

Any Help???

  • vegans seem to be using flax seed as an egg replacement often.. look up flax egg or something.. but it's high fat ofcourse..

    And aren't green tomatoes unripe?

  • Good on your mom for being open to change and you for helping her.

    Always been curious about these maters, but never tried one.  Perhaps lightly baking them with some spices could replicate the dish.  

    Haven't experimented with it, but I heard that if you put a pan of water on a lower shelf in the oven than your potatoes, they'll come out crispier, even without oil. 

    Might this work with the tomatoes?

    +1000 any suggestion of Dr. Esselstyn.  His book is a must read IMO too, but sometimes vids are an easier intro. Here's my fave:

  • Have you tried a "flax egg"? It's one tablespoon ground flax with three tablespoons water. Mix it and let it sit for a little bit so that it gets sticky. It is still overt fat, which she will want to keep to a minimum, but it is loaded with micronutrients that are not found in animal fats. For baking, a banana works as an egg replacement, too.

    this is the best I can find. definitely healthier than fried.

    Not for an everyday but when she really wants them, I could see her enjoying these

    anything with fried is going to use oil. when searching use baked instead :)

  • I would use this recipe and replace the oil with veggie broth.  So you will be steaming rather than frying.  You'll still get the taste but it won't be exactly the same.  Fried anything tastes good. The key to kicking the old food habits is to load up on carbs.  Props to you and Mum for making the journey! :)

  • Agree. She has begun 'carbing the fk up' with fruit smoothies and is working hard at minimizing fats and crap like cheese, egg containing foods, and candy. I'm working hard at getting all added fats out of her diet.

  • Tell her to read Prevent and Reverse Heart Disease by Dr. Esselstyn.  She should be eliminating all oil from her diet and keep her diet low fat (pretty much no overt fats) if she wants to reverse her heart disease.  She really shouldn't be eating anything fried.
