HOW DO I GET ENOUGH GREENS?!!!

I'm having a hard time getting enough leafy greens...

I feel like I don't enjoy eating them plain, or maybe it's because I haven't found a good low fat dressing!

I NEED IDEAS FOR GREEN SMOOTHIES, OR DRESSINGS!

How do all of you get enough greens????? Please help me!

  • I've never had a greens problem.  For me, after sweet all day, then I want the savory and salad fits that bill.   Green smoothies gross me out.  Then again, I like low fat dressings that others have been known to abhor.  Here is one such recipe.  It might be for you... it might not...

    Simple low fat dressing

    3 ripe Roma tomatoes

    3 clementines

1 large bunch of cilantro (aka coriander leaf in some parts of the world)

Blend and pour over your salad.  Be sure to slurp your plate when you're done.

My last tip is to try a variety of lettuces and greens to see what you like.  Of course, the fresher the better.  I can't digest kale, hate arugula (rocket), not a big fan of spinach or raw broccoli.  Romaine is my staple, I LOVE butter lettuce, bok choy is delish, and then there's this DIVINE cruciferous veggie called kohlrabi. That's just me.  Experiment and see what you like.  It's even more fun if you can grow some of your own greens.  I grew 12 varieties of heirloom lettuces last year and at least 6 of them were just unbelievably fantastic.  What fun!

  • Victoria Boutenko has a book dedicated to green smoothies with a lot of recipes.  a friend of mine has it, i am going to try to borrow it
    • I have the book too it's great! My fave green smoothie is Spinach leaves, Banana, strawberries, few pieces of frozen pineapple, and a couple sprigs of Parsley.. The parsley gives a really 'fresh' taste!

You can Youtube green smoothies as well, and see vids by the Boutenko clan! J

  • i just put a whole romaine head and 5 bananas in a blender. perfection :P
  • Green smoothies!

I have them for two or more meals a day.  Easy way to get 700g+ of greens.

    Some favourite, simple recipes:

    spinach, banana, coriander

orange, mandarin, sliced lemon, bok choy/asian greens, optional lettuce, roquette, broccoli sprouts, other herbs and citrus.

    kale, banana, berries

use frozen banana for green icecream

    use papaya for wobbly jelly

I'm a eating kale, banana, strawberry, blueberry, pear, lemon and a blended B12 tablet smoothie right now.  Yum!  (I started eating it as "lemon strawberry cheesecake" icream... then added the pears and greens.)

  • I make a banana spinach smoothie every morning and make a green juice at night because I have no taste for greens at the moment (I was gagging on my salads). I have only been LFRV for a month, though. I imagine greens will be more appealing in time.
  •  I think this is the yummiest drink!

1 Thing of celery or romaine lettuce

     5 Stems of kale

     1 Lemon

     1 Apple

It is sooo good and it's green! Jucie it!

  • This is a good dressing: avocado, tomato, lemon juice, scallions/garlic shoots (if you eat them), cilantro.

Add water slowly to thin out (not too much though!). It makes quite a bit and you'll probably need just a couple of tablespoons to coat your greens.

  • May I humbly suggest you consider Savory Veggie Stews.

Makes most people at least double their greens intake. They just go way beyond your normal salad.

I've yet to see anyone eat as much in the way of greens as I do. I don't have to force myself, it's because I love the Savory Stews so much. And there's a lot of others who agree with me.
